Beef Stew (Crock Pot)

After being sick the last few weeks, and morning sickness in the evenings the last couple of months, I figured it was high time I made my man one of his favorite dishes.  Beef Stew, a man's food!  But, I had yet to find one I really loved or could perfect.  So, I went searching for one that wasn't tomato based,  b/c I just don't like them, like really at all.  Then, I found this one and it was perfect bc it was a brown gravy and Lipton onion soup mix base. We all loved it! Especially my husband!  Another bonus? It's all literally just thrown in the crockpot and that's it!

Beef Stew (Crock Pot)

2.5-3 lbs Beef Stew Meat
4-5 Large Carrots, Sliced
4 Large Potatoes, cubed (skin still on)
1 c Frozen Corn
1 Small Onion, diced
1 Package Powdered Brown Gravy Mix
1 Package Lipton Onion Soup Mix
2 1/4 c Water
2 T Flour

Combine all ingredients in the order listed (minus 1/4 c water and flour) in a slow cooker.
Cook on low for approx 10 hours or on high for 5 hours.
Stir ingredients half way through to mix items together.

In the last 15-30 minutes of cooking, if thickening is required, stir remaining water and the flour in a small bowl until the mixture is smooth. Stir the flour mixture in the cooker. Cover and finish cooking.
Serve with crackers or buttered bread. Enjoy!

Crock Pot Lasagna

Did ya'll know that you could make lasagna in a crock pot !  Well, I didn't either until I found it on Pinterest! I've been meaning to try it out for a while now.  Now that I am forced to have more crock pot meals due to my son's soccer practices being at 5 pm, I finally got around to it.  So, what'd I think?  I thought it tasted great!  It did not disappoint one bit!  It's tastes practically what I make in the oven.  And, we have tons of leftovers!  I'm so happy I can now make my lasagna ahead of time.  Try it out...let me know what you think.  Who else loves crock pot meals as much as me?

Smothered Pork Chops (Slow Cooker)

It's been a while, I know.  Am I the only one that feels like life totally started over after having a 3rd child?  It's been super hard for me to get back to my routines.  It's starting to get there, now that he's 4 months old :)  But, I was going through my pictures and saw this yummy dish that I made for my family on Valentine's and thought I'd go ahead and share.  It's seriously the yummiest pork chop I've ever had!  A lot of prep to get into the crock pot and a few more after it'd done cooking, but well worth it if you want a dish to impress your man.  I mean, seriously, what man wouldn't be want a pork chop smothered in bacon?  I wouldn't recommend eating this every night, it's not the healthiest dish, but a few times a year isn't going to hurt a thing, it'll just make you feel amazing about yourself that you made such a perfectly tender smothered pork chop.  I even pulled out a knife for cutting them and soon realized there was no need, a fork did just fine.  They were that tender!  I first had this when I went to visit my sister in GA over a year ago when she made it for me.  YUM!  It was so good.  I finally decided to impress my man this year w/ it.  And can I just say, it worked!  I heard him telling his brother about it later :)

Looks amazing right?!

Chicken Enchilada Soup

Here's another low cal recipe!  It was very easy to make and tastes great too.  I love recipes you can throw everything together in one dish and have it ready to eat later.  This is a crock pot dish, but you can make it on the stove-top as well.

Crock Pot Chicken Parmesan

I have a great Chicken Parmesan recipe that I have yet to share w/ ya'll.  It's amazing, but honestly I hate breading chicken and frying it, every time I deal w/ oil I always get splatters on my shirt!  I know, I should wear an apron, after all, isn't that my blog's name?  haha  I'll do it soon.  But anyways, I found this recipe and thought I'd give it a try.  I thought it was so good and so simple!

Coconut Chicken Curry

My sister Bonny has been trying to get me to make this Coconut Chicken Curry for a while now.  I kind of put it off for a little while because it sounded so weird w/ having potatoes in it, but you know what?  I finally made it, and it didn't fail to impress.  Don't let what's in it scare you away from trying it out.  My husband and brother-in-law couldn't get enough of it!  Luckily this recipe makes a ton, so there was more than enough.  Also be warned, you might want to cut the recipe in 1/2 if there's not going to be that many people eating it, or just take that opportunity to have people over!
Looks good right?

Brown Sugar and Balsamic Glazed Pork Loin

I made Brown Sugar and Balsamic Glazed Pork Loin for a Sunday dinner, which was so easy.  Have I mentioned, or have you noticed, I love pork dishes?!  I thought this looked amazing, which you'll understand when you see the picture I saw below.  My husband also loves Balsamic Vinegar, so I thought I'd give it a try.  It turned out dry, but that's probably my fault for taking too long of a nap and letting it cook longer than intended.  But, the flavors were great, I would definitely want to make this again, just time it better.

This is what it looked like for me.  Great flavor, but a little dry.

Crock Pot Carnitas

I don't know if you've noticed or not, but I guess I tend to make a lot of Mexican dishes.  They're easy, over all pretty low in fat and very tasty.  This recipe was given to me by my good friend Janel.  It's extremely easy and tastes great!  I like to serve the pork in fried corn tortillas and topped off w/ homemade guacamole and sour cream.  I rate this recipe a 4!

Chile Verde {Mexican Stewed Pork-Crock Pot}

I'm back!  I went to Tennessee to visit my family for 3 weeks and am now getting back into the routine of things.  I have several new recipes that I will be adding sometime soon.  Here's the first!  I actually made this just before I left.  It's actually another wonderful recipe from Mel's Kitchen Cafe.  This was my 2nd time in making it, and both times they were great.  This last time though, I don't think I cooked the meat long enough, b/c it wasn't as easy to shred.  The 1st time, it seriously just fell apart, this time not as much.  I love this recipe b/c it is so full of flavors and the pork just melts in your mouth.  And, have I mentioned before how much I love crock pot meals?  Well, I love them!  Anyways, I'll go ahead and rate this a 4.5.

Slow Cooker French Dip

I can't express to you how much I love this recipe!  It's so good!  My momma gave me this recipe a while back now, I haven't made it that often, but every time I do I question why I don't make it every day!  The only drawback to making this French Dip is having to buy the rump roast, they can be so expensive, but worth it to make it!  This is a great meal to make if you're having guests, they'll be impressed every time!  I rate this recipe a 5!!!  YUMMY!

Chicken Fajitas (Crock Pot)

This recipe has to be one of my family's favorites!  It's such an easy thing to throw together in the morning, turn on the crock pot and totally forget about it until dinner time comes around and you're all ready to eat!!  It tastes so good, so flavorful, but yet you put so little effort into it!  Just the way I like it!  Depending on how spicy you like your food, you can either use jalapenos or green chilies, I prefer more spice so I use Jalapenos!!  Also this dish is sooo low in calories, great if you're watching what you eat!  I rate this recipe a 4.5.

After cooking for 8 hours and right after shredding the chicken!

BBQ Pulled Pork Sandwiches (Crock Pot)

I felt like adding another recipe, I've actually made this twice now.  It is so easy and so good!  I had never made pulled pork before (surprising considering I am from TN, I know), but this recipe seems like it's easier than most. Once again, this recipe is provided by Mel's Kitchen.  I'm not kidding, I love her recipes!  Last time I made this we had another couple over, so there were 4 adults and 3 children, and this was just enough for all of us, I don't know if we ate more than normal or what.  So, if you're cooking for more, then plan on making more!  You could also do what my mother-in-law does when she makes pulled pork, she serves them on rolls, so it goes a lot further!  I rate this recipe a 5!

Right after placing into the crockpot.

Taco Soup (Crock Pot)

Since I finished all my house work earlier than planned (I had a lot that I neglected yesterday), I decided I would post a recipe that I made last night (or maybe I should say Monday, last night we had the leftovers!).  This one was given to me by one of my friends growing up when we were roommates in college, Holly that's you!  So, I have actually been making this one for quite a while.  She calls it Santa Fe Soup, but I just call it Taco Soup.  It's so good, and soooo easy!  This is probably one of the easiest recipes ever.  The hardest part of it is that you have to brown some ground beef (real hard right ;).  I rate this recipe a 5.
