Double Marinated Basil Lime Chicken

This was one amazing, fresh and yummy tasting dish! I even dusted off the grill and cooked these puppies up all by myself! In fact, I'm making them again today! (I was supposed to yesterday, but thanks to a HUGE birds next found in my grill yesterday, it has been delayed until today. Click here or here to see what I'm talking about.) Don't let the double marinade thing scare you off, both super easy to make, just look at it as a double bonus for your taste buds.  FYI, the chicken is really good w/o the second marinade too, not as full of taste, but still great! Sticky Coconut Chicken

My sister Bonny shared this recipe with me a while back and I finally made it a few months ago for some friends.  I really expected it to make more, next time I will use more chicken thighs.  I found out that thighs shrink up a lot!  Anyways, they tasted great, I will definitely be making them again.

Classic Grilled Burgers

My sister Bonny had me try these burgers out.  She said she made them in a frying pan (b/c her hubby wasn't home to grill them before dinner) and they were still the best burgers they've ever had.  Her husband and children asked for more!  So, what did I think?  I gave it a try and I thought they were actually pretty good.  I really liked what the water did to the patties, they made them so tender and juicy and the flavors was good, but there just wasn't enough flavor for me.  I think they probably would be right up there for my favorite burgers if I had just added a bit of Montreal Steak Seasoning.  I love that stuff on burgers!  And that added to this recipe would make it perfect!  So, give it a try and let me know what you think.  I'll definitely be making these again, so I'll update what I think about the steak seasoning when I try them again.

Crusty Onion Pork Chops

When I first saw this recipe, honestly, I thought it sounded kind of odd, but it also reminded me of my Hawaiian Pork Skewer Recipe, so I thought, "Why not give it a try?"  They were so easy to make!  And they actually tasted good too!  It's nice to have different easy Pork Chop recipes, and this is definitely one to add to the list.  I rate this a 4.

Easy Pork Chops

This is one of my Momma's recipes.  It's so so simple and surprisingly tastes like you spent a lot more time preparing the pork chops.  It's amazing what a wonderful taste it has w/ just salt and pepper!  Trust me, it seems to simple to taste so great, but try it and you'll be very surprised.  I rate this a 4.

Generously salt and pepper.

Thai Peanut Chicken Skewers

I'm visiting my in-laws in AZ right now.  Yesterday was my father-in-laws birthday, so Nancy (mother-in-law) made us this delicious meal of Thai Peanut Chicken Skewers, per request of the birthday boy.  This is my sister-in-law, Stacie's recipe.  She's made this for us a few times on her visits.  It's so good!  It has a name close to this recipe, but it's actually very different but, still both very good.  I rate this recipe a 5.

Marinate the chicken 1-4 hours.

Thai Peanut Chicken

When I was married a very close friend's (Janel) grandparents gave me their family's cookbook, "A Taste of Heaven", Recipe's from Hale (their last name is Hale, clever right?).  Her grandparents were wonderful!  They practically took me in as their own grandchild while I was in college.  I always wished they were mine!  Anyways, I have used this a lot in my almost 6 years of marriage, but not enough.  This is a recipe I recently found in the cookbook and tried for the first time Sunday.  It was so so simple, and I thought it was pretty dang good.  My husband said he wouldn't mind if I made it often.  It makes a wonderful crust around the chicken and the flavor is great and not overpowering.  I rate this recipe a 4.5.
Mix all ingredients (but the chicken) together.

Hawaiian Pork Skewers

These are so good, and so dang easy!  I've been making these for a while now, but I haven't made them all winter!  It felt so good outside today that I thought, "Why not bring some Summer into our home by using the grill?"  I got this recipe from Good Things Utah probably just over a year ago. The Woods on Ninth came on the show and shared the recipe, it looked so good, I just had to try it!  Well worth it!  I rate this recipe a 4.5.
