Once again, this is a recipe given to me by my sister, Bonny. I have mostly made the fried rice as just a side, without the chicken. This time I decided to make Chicken Fried Rice as the main dish. It turned out pretty good! You basically make it the same way either way, the only difference is w/ or w/o chicken. This is a quick and easy dish. I rate this a 4.
Mix in pre-cooked rice and veggies. Add more soy sauce as needed, until rice is evenly browned.
Make a hole in the center...
Scramble eggs in the center and mix in. The eggs will continue to cook when mixed with the rice.
Salt and pepper to taste. And you're done!
Serve on the side of your favorite Asian dish, or as the main dish along w/ delicious egg rolls! Yum!!
Chicken Fried Rice
Ingredients:
2-3 Cups Rice (I like to use Jasmine Rice)
6-8 oz Mixed Veggies (Canned or Frozen)
2 T Olive Oil
2 Chicken Breasts sliced
1/4 c. Soy Sauce
1 t. Minced Garlic (or 1 clove)
2-3 eggs
Precook the amount of rice and mixed veggies you'd like so they're ready when needed. Heat oil and cook sliced chicken until almost cooked through. Add in 1/4 c. soy sauce and garlic and heat until chicken is no longer pink and soy sauce is heated. Mix in rice and veggies and more soy sauce as needed. Mix until evenly brown. Spread rice to make a hole in the center. Scramble eggs in the center and mix into the rice when almost a solid. Salt and pepper to taste. Serve as a side or as the main dish. Enjoy!!

Oh yummmmmmy! I always tell Chris I want to find a delish fried rice recipe but I never look.. can't wait to try this! It looks awesome!
I have learned a few new tricks since then. I like to add chopped onion to the oil in the beginning now and I also scramble the egg before hand and put it in and lastly this recipe works best with cold rice!!

So good! We only use 1 c rice to serve 2 people and adjust accordingly. I highly recommend using the jasmine rice with this recipe.
I totally agree, jasmine rice is perfect for this recipe. So good!
