I have a great Chicken Parmesan recipe that I have yet to share w/ ya'll. It's amazing, but honestly I hate breading chicken and frying it, every time I deal w/ oil I always get splatters on my shirt! I know, I should wear an apron, after all, isn't that my blog's name? haha I'll do it soon. But anyways, I found this recipe and thought I'd give it a try. I thought it was so good and so simple!
Looks pretty good right? I think next time I'll try to butterfly the chicken or use tenderloins instead. My hubby has problems w/ thick pieces of chicken.
Prepare your eggs and bread crumbs/spices.
Dip chicken in egg and then cover in breadcrumbs.
Place 1 Tb oil at the bottom of crock pot and then place breaded chicken on top.
Place 1-2 slices of Mozzarella cheese on each chicken breast.
Pour your favorite Spaghetti sauce on top. I didn't realize I was out (or maybe that the stuff I had in the fridge had gone bad), so I had to improvise and make my own quick sauce.
Cook on low for 6-7 hours or high for 3-4 hours.
Serve over your favorite noodle.
Yum! The cheese was amazing.
Crock Pot Chicken Parmesan
Ingredients
2-4 boneless, skinless chicken breast halves
1/2 cup bread crumbs
1/4 cup Parmesan cheese
1/2 t Italian Seasoning
1/4 t black pepper
1/4 t kosher salt
1 T olive oil
1 beaten egg
sliced mozzarella cheese
favorite jarred marinara sauce
Spread the 1 T of olive oil into the bottom of your crock pot stoneware insert. Whip the egg with a fork in a separate bowl and mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish. Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings. Place the chicken breast pieces in the bottom of the crock pot. Layer 1-2 slices of mozzarella cheese on top. Cover with entire jar of marinara sauce. Close lid and cook on low for 6-7 hours or high for 3-4. If your chicken is still frozen, it will take longer. Serve with your favorite pasta. Enjoy!

I like the other one probably better. But, this one is really good too. And, it's easier to make!

I made this a few weeks ago, and it was soo tender and juicy it was a HUGE hit!
