Irish Boiled Red Potatoes

I had a ton of red potatoes I needed to use up, but I didn't want to cook them up the same way every time.  So I started searching for a recipe!  I came across this Irish Boiled Red Potatoes recipe and I thought why not try it out?  I actually had fresh parsley (I used Italian Parsley) and everything else needed.  I thought they were pretty dang good for boiled potatoes.  If you love the taste of fresh Parsley, you're gonna love this!  And apparently they're Irish, so they'd be great for St. Patrick's day coming up!




Irish Boiled Red Potatoes

Ingredients:
6 red potatoes
1 T butter
1/8 c chopped Parsley
1/2 t minced garlic
dash of salt

1. Quarter red potatoes then boil just until fork tender then drain and place them back into the pot on low heat.
2. Add the butter, parsley, garlic and salt.  Stir well to combine.
3. Serve hot and Enjoy!
