White Chocolate Vanilla Cupcakes

Remember the Peanut Butter Cup Cupcakes?  Well here's another wonderful recipe from that same cookbook.  I needed to make a last minute dessert, so I looked in my pantry and just so happened to have 1 white cake mix.  So, I searched 101 Gourmet Cupcakes in 10 Minutes cookbook for a recipe that would work.  Well, I was so lucky to have everything needed to make these yummy White Chocolate Vanilla Cupcakes w/ White Chocolate Buttercream Frosting.  So, I'm going to share the recipe w/ ya'll!


A couple of nights ago we had a vintage dessert night at church.  I was assigned cupcakes, and since the color theme was black and white, I decided these cupcakes would be perfect, I even cooked them in b&w paper liners.


Throw in cake mix and white chocolate chips in a large mixing bowl.

Mix together w/ vanilla, milk, eggs and oil...

Until creamy.

Fill cupcake liner 3/4 full.  An ice cream scoop is the perfect amount, and makes it mess free.  But, I don't have one w/ a thumb thingy to push out all the batter.  So, I use 2 scoops from my cookie scooper.  Bake at 350 for 15-18 minutes.  Allow to cool.


While baking/cooling go ahead and make the frosting.  Beat butter for about 30 sec.  Add sugar and milk.  Beat until nice and creamy.  Use a cheese grater to finely chop white chocolate chunks and mix in.

Mix everything together until creamy, add 1 more T of milk if it is too thick.

Spread frosting onto cooled cupcakes.

Take a bite and enjoy!  Can you see the white chocolate chunks?  If you like white chocolate, you're going to love these!


White Chocolate Vanilla Cupcakes


Ingredients:

1 box white cake mix
1 cup white chocolate chips
1 tsp. vanilla extract
1 cup milk
2 eggs
1/2 cup oil
1 cup white chocolate chunks


Mix together cake mix, white chocolate chips, vanilla, milk, eggs, and oil.  Fill paper liners 3/4 full.

Bake at 350 for 15-18 minutes or until cake springs back when lightly touched.  Allow to cool completely on wire rack.

Frost with with white chocolate frosting and garnish with white chocolate chunks (I didn't garnish).  Enjoy!

White Chocolate Buttercream Frosting

Ingredients:

1/2 c Butter (1 stick) , room temperature
3 3/4 cups powdered sugar
3-4 T milk or cream
1 cup finely chopped white chocolate

Place butter in a large mixing bowl.  Beat until light and fluffy, about 30 seconds.  Stop mixer before adding sugar to avoid a large mess.

Add sugar and 3 T. milk or cream.  Beat frosting starting on low, increasing your speed until frosting is nice and creamy.  Add 1 cup finely chopped white chocolate into frosting.  Add up to 1 more T. of milk or cream if frosting is too thick.  Enjoy!!
