Easy Banana Pancakes

I thought I'd share these wonderful banana pancakes that I made last night for dinner (or should I say brinner?)  We love breakfast for dinner, we should definitely do it more often!  I thought this would be perfect for this weekend.  If I ever make an actual breakfast, besides cereal, more than likely it's going to be on a Saturday.  Mostly everyone has boxed pancake mix right?  These aren't completely from scratch, but I do make a few changes.  I tend to like buttermilk pancakes the best, and have found that the off brand, such as Wal-Mart or Kroger, is very good.  Better than some of the name-brands I have tried!  You've probably tried banana pancakes w/ slices of banana right?  Well this one is much better, my friend Gennaveeve taught me this trick of actually mashing the bananas, that way there's banana in every bite! (Not too much, not too little, just right!!)  I would rate this recipe a 5!!


I follow the amount of liquid the box suggests, but I like to add half milk (or 1/2 & 1/2) and half water to mix in.  If it's too thick I add maybe 1/8 c more of water.  After the pancake batter is mixed then add the bananas in and mash, mix well.

Turn when edges looked cooked.

Top off w/ your favorite syrup, I went w/ Maple.

Banana Pancakes

Ingredients:
*2 cups Buttermilk Pancake Mix
* 2/3 c. Milk or 1/2 & 1/2
* 2/3 + 1/8 c. Water
* 2-3 bananas

1. Preheat buttered griddle to 375. 
2. Combine pancake mix, 2/3 c milk and 2/3 c water.  Stir until large lumps break up.  If you like thinner pancakes add the rest of the water and mix in.
3. Add the bananas and mash with a potato masher until they are completely broken up.  Mix well.
4. Pour about 1/4 c batter for each pancake onto hot griddle.  Turn pancakes when edges look cooked.  Turn only once.  So easy right?  And soo good!  Enjoy!

Yum!!! We had these yesterday! You should try putting about a teaspoon or so of cinnamon in the mix it makes it SOO good!!! Just a suggestion =)
