Chicken Salad Croissant Sandwich

I have always loved Chicken Salad sandwiches but, have never made them myself.  I finally decided it was time.  I don't know what made me think it would be hard to make these, but they're not at all!  They are actually very, very easy!  I found 2 different recipes, reduced fat and a regular chicken salad.  I decided to use the non-fat yogurt idea and add it to the regular chicken salad recipe.  Oh and fyi, the Costco croissants are just enough for the amount of chicken salad made.  I rate this a 4.5.



Shred chicken and add in chopped veggies.

Chop grapes in half.  I would recommend using green grapes over others (unlike I did).

Mix everything together, including mayo and yogurt.

Serve in Croissants, yummy!

Chicken Salad Croissant Sandwich

Ingredients:

4 shredded chicken breasts
1-2 cups mayonnaise
1-2 cups plain yogurt
1 teaspoon lemon juice
1/2 cup green onions chopped
1/2 cup celery chopped
1/2 cup chopped slivered almonds
green grapes (halved)
salt and pepper

Mix everything together.  Let sit in the fridge for a couple of hours before serving. Serve on croissants.  Enjoy!!

I have a very similar recipe and I love it. By the way we had your poppy seed chick the other night adn it was yummy. Tonight we are trying the Crock Pot Carnitas and your spanish rice:)
