Enchilada Casserole

I don't know where my Momma got this recipe, but she gave it to me, and we love it!  I've been making this for a few years now.  This has to be one of my husband's favorite meals!  I like to serve Enchilada Casserole with a side of Spanish rice (recipe up next) and refried beans.  It's easy and so good!

Enchilada Casserole

Ingredients:

1 lb Ground Beef
1 Onion chopped
1 4 oz Can Green Chilies or Jalapenos
1/4 c chopped cilantro (optional)
2 Cans Red Enchilada Sauce
12 Corn Tortillas
Mexican Blend Cheese

Brown Ground Beef along with onions, drain and mix in green chilies and cilantro - Meat Mixture.
 
Layer: 1. Pour 1 can of Enchilada sauce to coat the bottom of a 9x13 pan.  2. 5-6 corn tortillas.  3. Meat Mixture. 4. Sprinkle cheese to cover.  5. 2nd Can of Enchilada Sauce. 6.  Another layer of 5-6 corn tortillas.  7. Cover with Cheese!  Bake @ 350 for 30 minutes.  Let cool for at least 5 minutes.  Top off with sour cream and green taco sauce. Serve w/ a side of Spanish Rice and refried beans.  Enjoy!!

Ahh this is so funny! I was scrolling down through your post on my google reader, and when I scrolled down the top of your green taco sauce bottle was all I could see. Definately thought it was a beer! Haha.. I was like "What is Brittany doing drinking beer?" I thought it was hilarious! =)

can u make it with chicken instead?

Oh yeah, I bet you you could! It'd probably be pretty good too. Maybe if you shred the chicken then cook it the same way you would w/ the onions, in a little bit of oil. If you try it let me know how it turns out.

What size cans of enchilada sauce? And ya'll have Kroger in Utah?

10-12 oz. It depends on the brand. And no, we don't have Kroger, but we do have Smiths. It's the same company and they sale Kroger brand.

I've made this with green enchilada sauce or both and it was really yummy.
