S'mores Stuffed Chocolate Chip Cookies

A friend of mine made these for me a while back, and I couldn't believe how amazing they were!! I mean, who doesn't love chocolate chip and s'mores?! Well then, why not combine them? I finally gave in last night and made them. Yum! And, You wouldn't believe the size of these things either! They're the size of four of my regular cookies with a s'more inside. I could only fit 5 on a cookie sheet, they're that big!  Oh, and they're even great left over, just reheat them in the microwave.

Really? Can y'all resist these? Just looking at them makes my mouth water. 


Prepare one quarter of a graham cracker, 3 Hershey squares and 6 small marshmallows (or 1 half of a large marshmallow). 

I used about 2 Tbs sized balls for the bottom and two more for the top. Place the s'more on top of one of the large cookie balls and another ball on top. 

Mold the two large cookie balls around the s'more. Bake at 350 for 15-17 minutes.

Yummy!! Look at it oozing out! 

This is a regular sized cookie sheet, just to give you a visual. Let it cool for 10 minutes before transferring cookies.

This thing fills up the center of a small plate, not the tea cup size, bigger.

S'mores Stuffed Chocolate Chip Cookies

2 1/4 cups flour
1 t. baking soda
1 t. salt
1/2 c Crisco butter + 1 T water
1/2 c softened butter
3/4 c granulated sugar
3/4 c packed brown sugar
1 t. vanilla extract
2 large eggs
2 cups chocolate chips (milk chocolate or semi-sweet)

24 graham cracker quarters or 12 full sheets separated at perforations
3 Hershey Bars, broken into rows of 3 bars
6 large marshmallows cut in half lengthwise or 72 small marshmallows
1.  Preheat oven to 350 degrees F. and line a large baking sheet with parchment. 
2.  COMBINE flour, baking soda and salt in small bowl. Beat Crisco butter, water, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts.
4.  Layer a graham cracker quarter with 3 Hershey chocolate squares and 1 marshmallow half or 6 mini mallows.  Top s’more with a large scoop of cookie dough.  Place in hands and place another large scoop on bottom then front and back sides as needed.  Form dough around s’mores.  This will get messy, but stick with it, it does not have to be perfect.  S’mores will move around but it’s okay.  Place large cookies onto prepared baking sheet and bake for 15-17 minutes or until edges are golden and centers are cooked through.  Let cool for 10 minutes before transferring to cooling rack or serving plate.
Makes 12 large stuffed cookies.  Enjoy!
