One Pot Cheesy Smoked Sausage Pasta Skillet

One pot dishes are officially now my favorite easiest meal to cook, and this recipe was above all the best one pot dish I've ever tried.  It was delicious! My husband finished off the pot after everyone was done eating, that says a lot since he's not a huge pasta fan.  It was so fresh tasting and easy to eat, I loved it! Oh, and did I mention, it's so extremely quick and easy to make?! B/c it is!

Fry the smoked sausage and onions.  (I used turkey sausage from Costco, and it worked great!)

Add chicken broth, tomatoes, milk, pasta, and seasonings. Simmer for 15 minutes. 

Stir in cheese and top of more more cheese and green onions.

This only makes 4 large servings, so if you are feeding a larger group or want leftovers, I'd recommend doubling the recipe, it's well worth it!

One Pot Cheesy Smoked Sausage Pasta Skillet

Ingredients

1 olive oil
1 lb Smoked Turkey Sausage, sliced
1 cup diced onion
1 T minced garlic
1 can (14.5 oz) Chicken Broth
1 (14.5 oz) can diced tomatoes
1/2 cup milk or heavy cream
8 oz dry pasta (any small pasta will do)
1/2 teaspoon salt and pepper, each
1 cup shredded Cheddar-Jack cheese (I used Mozzarella and it was great!)
1/3 cup chopped green onions, for garnish

Add olive oil to a 4-5 quart saute pan over medium high heat. Add onions and sausage and cook until lightly browned. Add garlic and cook for about 30 seconds.
Add chicken broth, tomatoes, milk, pasta, and seasonings. Bring the mixture to a boil, cover, and reduce heat to low. Simmer for about 15 minutes, or until pasta is tender.
Turn off the heat and stir in 1/2 cup of cheese. Sprinkle remaining cheese on top and cover for about five minutes to allow cheese to melt. Top with sliced scallions and serve. Enjoy!
