Garlic Parmesan Mashed Potatoes

I made these Garlic Parmesan Mashed Potatoes along side of the Brown Sugar Spiced Pork Loin recipe.  They were really good!  I love mashed potatoes, all kinds!  These were easy and tasted great!



Chop potatoes into chunks, usually I cut them even smaller.  I used red potatoes and chose to leave the skin on.  If I use regular potatoes, I peel off about 1/2 of the skin and leave some on.

Mash and mix everything together.

 And serve!  Yum!

Garlic Parmesan Mashed Potatoes


Ingredients:

6-8 small potatoes, peeled and diced
2 tablespoons butter
2 garlic cloves, minced
1/4 cup sour cream
1/4 cup heavy cream (I used half and half)
1/4 cup Parmesan cheese
green onion, diced
salt and pepper

In large pot, add water, potatoes and salt and bring to a boil. Reduce heat to medium and let cook until potatoes are tender. Drain water. Mash potatoes until creamy. Add all ingredients and mix well. Enjoy!
