Day 14 - Pumpkin Pancakes

Welcome to day 14 of 25 Days of Recipes!  I'd like to introduce my good friend Joe.  Actually...here's the story, try to keep up ;)  Joe and my hubby grew up together in Washington State and were best friends.  His wife, Lindsey, and I grew up together in TN and we were best friends.  So...after my hubby and I started dating, we introduced Joe and Lindsey and it was love at first sight.  They ended up getting married exactly a week before us.  We've all been living with in 30 minutes of eachother here in Utah, until a few months ago when they left us to move to AZ :(  But, they are some of the best friends anyone could ever ask for, so of course we'll still see eachother.  So, when Joe contacted me and told me he had a recipe I could include on the blog, I totally thought he was joking.  But, he actually emailed me this wonderful recipe, so here we are, we have a guy sharing today!

From the time I was 4 years old I remember helping my mother prepare a batch of homemade sourdough pancakes from scratch. This memory, and a love for eating has motivated me in my drive for food excellence and my dedication to developing a refined taste for the good things in life.  Since that day long ago, I have prepared, and perfected meals ranging from hearty and rich to refined and light. Throughout this journey of food perfection I have found one meal to delight the senses more than most, pumpkin pancakes.

This recipe will not only be a breakfast for your family, but it will be an experience, bringing back the memories of coming in from the cold outside only to smell the warm aroma of pumpkin pie baking in the oven, a hint of cinnamon in the air, and your mother in her apron preparing a warm family meal.
Prepare this meal, and watch as your family comes together in that wonderful holiday spirit. This meal has helped me to go back to my roots, and to the beginning of this cuisine exploration, back to pancakes.

Pumpkin Pancakes
2 - eggs
1 cup - milk
1/2 cup - Pumpkin (canned)
2 T. - Sugar
1 t. - pumpkin spice
1 3/4 cups - Bisquick
1/4 cup oil

1. Mix all ingredients
2. Cook on griddle at 350 deg.
3. Makes about 10 pancakes

Cinnamon Butter
2 cups - powdered sugar
1/2 cup - butter (room temp)
1 t. - cinnamon

1. Mix all ingredients until fully mixed, and buttery texture
2. I often double the butter but use the same amount of sugar and cinnamon (it makes it easier to get to a good texture, and doesn't taste much different)

Buttermilk Syrup
3/4 cup - Buttermilk
1 1/2 cup - Sugar
1 stick - real butter
2 T. - Corn Syrup
1 t. - Baking Soda
2 t. - Vanilla

1. Combine all except vanilla
2. Bring to a boil
3. Reduce to low, stir frequently for 8-9 minutes or until golden brown (it is normally more like 12 minutes for me)
4. Remove from heat and add vanilla
Note: These are amazing, you will not be disappointed.  The butter and syrup usually makes enough for a couple batches of the pancakes, so you can make a double batch, or you can refrigerate and save the butter and syrup until the next time you make the pancakes.  Great holiday breakfast!!!

lol... in the recipe it says to beat the eggs first. I don't know if that matters or not.

I made these tonight and they were fabulous! Thanks for the recipe. Next time I think I will add more pumpkin pie spice.
