Did ya'll know that you could make lasagna in a crock pot ! Well, I didn't either until I found it on Pinterest! I've been meaning to try it out for a while now. Now that I am forced to have more crock pot meals due to my son's soccer practices being at 5 pm, I finally got around to it. So, what'd I think? I thought it tasted great! It did not disappoint one bit! It's tastes practically what I make in the oven. And, we have tons of leftovers! I'm so happy I can now make my lasagna ahead of time. Try it out...let me know what you think. Who else loves crock pot meals as much as me?

Spooky Monster Pudding Cups
I found this idea and just had to try it out! Aren't they adorable? These "spooky" pudding cups are perfect for School Halloween parties, get-togethers, after-school snack, ect. Why not get the kids involved and let them decorate the faces for you? They don't only look good, but taste great too!

White Chocolate Covered Oreos
I've been on a little break for the past few weeks, I went to visit my family in TN for 3 weeks and then my mom flew back w/ me and stayed for an extra few days. So, I figured now that I'm back home I should add a recipe. And, since Halloween season is sneaking up on us, what better to share than an easy Halloween treat?! These white chocolate covered oreos are perfect for a quick, yet yummy treat for any upcoming holiday parties! I actually made these for a Halloween party last year and most recent I made them for a black and white vintage dessert party by using black and white pearl sprinkles. There are so many things you can use these cookies for, even just for your own indulgence.

Chocolate Eclair Cake w/ Homemade Chocolate Sauce Topping
I found this dessert on Pinterest and decided I had to try it, so I went ahead and made it for Father's Day. It turned out amazing! I thought it was even better than regular eclairs. The crust was so light and flaky, the pudding was amazing (but that of course b/c it's made with cream cheese), and I was so impressed with the homemade hot fudge! It was all very good. Seriously, so easy and delicious. Go ahead give it a try and let me know what you think.

Creamy Chicken Pesto Pasta
Before I get into the recipe, I should probably announce that I found out I will be appearing on Good Things Utah and the Daily Dish to share 2 of my recipes on Monday. I am still trying to decide which ones to share, so watch and find out! If you live in Utah then you can watch the Daily Dish on CW30 at 9 AM and GTU on ABC4 at 10 AM. Ok, so on to the recipe...
This recipe was given to me a few years ago by my good friend Lindsey. It is one of the easiest recipes you could make, in fact, I think it's one of Lindsey's go to recipes for last minute meals. Who doesn't love Pesto?! I think it's pretty amazing myself. :) Go ahead and try it out, yum.
The only problem w/ this meal is I eat a little more than I should in one sitting.

Momma's Southern Banana Pudding
To answer the question from earlier...I am having a....Boy!! That'll make 3 boys for me :) I am seriously so surprised. I pretty much had no doubt in my mind it was going to be a girl. Just comes to show, I can be wrong ;) But onto the dessert...
I definitely should have dipped my bananas in Lemon juice (if you didn't know that, this prevents fruit from browning as quickly), I'm a little embarrassed to post this picture! They weren't old bananas, I promise. They were just cut the night before. So please look past the browning bananas, b/c I can't. Anyways, I think a lot of people have recipes for Banana Pudding, but this one is my mom's very own recipe she has come to perfect. My mom can't invite a large group of people for dinner w/o making this for the dessert. It makes a ton and is always a huge hit. Seriously, so good! You do need to make it at least 3 hrs before eating, I like even longer though because the longer the wafers sit in the pudding the softer they get, almost cake like. So, I like to make it the night before eating.

Oreo Cheesecake/Truffle Balls
I hosted a Usborne Book Party this past Tuesday so, I decided I needed to make something special. I found these 2 recipes: Oreo Cheesecake Pops and Oreo Truffle Balls, and decided to make them both! They're the same all except for the type of chocolate used to dip. They were a huge hit! I wish I could've eaten more, but I limited myself :) It's crazy how easy these things are!! I would never think something so good, would be so dang easy. The part that took the longest was just dipping the balls, that's it! I rate this a 5++++ (If I could go higher, I would!)

Artichoke Dip
Can I just say how much I love, love, love this dip?!?! I think it is so good! I was first introduced to it when I went to meet my husband's family for the 1st time during Thanksgiving, while we were still dating. They always have this as an appetizer to snack on before the actual Thanksgiving Dinner. I just couldn't believe how good it was, and that it was homemade! I've continued on this tradition with my family for our own Thanksgivings. It's also a favorite of mine to bring to parties and get-togethers. So, I'm going to share the recipe with ya'll today, I just hope you enjoy it 1/2 as much as I do! I rate this a 5.
These are all the ingredients needed. My favorite way to make the dip is using half chilies and half jalapenos. If you don't like as much spice just use chilies, if you like A LOT then use just jalapenos. I think using 1/2 of each makes the perfect amount of spice.

Enchilada Casserole
I don't know where my Momma got this recipe, but she gave it to me, and we love it! I've been making this for a few years now. This has to be one of my husband's favorite meals! I like to serve Enchilada Casserole with a side of Spanish rice (recipe up next) and refried beans. It's easy and so good!

Taco Soup (Crock Pot)
Since I finished all my house work earlier than planned (I had a lot that I neglected yesterday), I decided I would post a recipe that I made last night (or maybe I should say Monday, last night we had the leftovers!). This one was given to me by one of my friends growing up when we were roommates in college, Holly that's you! So, I have actually been making this one for quite a while. She calls it Santa Fe Soup, but I just call it Taco Soup. It's so good, and soooo easy! This is probably one of the easiest recipes ever. The hardest part of it is that you have to brown some ground beef (real hard right ;). I rate this recipe a 5.
