Day 6 - Three Cheese Lasagna

Welcome to Day 6 of 25 Days of Recipes.  I am so excited to welcome Katie from Craptastic.  Seriously, she is such a fun girl!  She was one of my best friends in High School, we had some good times together.  I so wish we still live close together so we could craft all day, you should check out her work, seriously, she's amazing!  I'm pretty sure that all of her readers feel like they know her personally and only wish that they could be one of her friends.

Hey everybody!! I'm Katie from CRAPTASTIC!
Today I'm sharing one of my favorite lasagna recipes!! I got it from one of my good friend's Mom years ago and it is always a big hit!
It is a three cheese lasagna and so easy to make!  My favorite part is that it tastes even better the next day!  This is great to make when you're having company over, or if you just want to prepare a dish to munch on all week!
This would be the perfect recipe for those of you who have family stay a few days before Christmas!

Here are all the ingredients:

Three Cheese Lasagna

Lasagna noodles
Large jar of Prego Italian sauce (or your fave sauce)
4 cups of mozzarella cheese
1 1/2 cups of Parmesan cheese
One large container of large curd cottage cheese
1-2 eggs
Your choice of seasoning

Before you start anything, get your pot of water boiling so you can cook your lasagna noodles.  I always dump a little bit of oil into the water to keep the lasagna noodles from sticking to each other.

While your noodles are cooking, mix your cottage cheese, 1-2 eggs (I use two, but one works fine), and seasoning of your choice in a bowl.

I use garlic powder and oregano.


Mix this together.

Cook your lasagna noodles until they are soft, but not entirely done.

When they are ready, pour out the hot water and replace it with cold water.  You may have to repeat this a few times until the water stays at a comfortable temperature.  Keep your cooked lasagna noodles covered by water as you are layering the dish.

Now grab a lasagna dish and coat it with non-stick spray.

Preheat your oven to 350 degrees

TIME TO LAYER!


1.  First lay down your lasagna noodles.  I always let mine overlap just a little bit.  If you have a longer dish, you may need to break one noodle to fit at the end of the dish.

2.  Now add your Prego sauce.  I'm always very generous with my sauce, as I don't like dry lasagna.

3.  Pour on 1/3 of your prepared cottage cheese mix and spread it over the pasta sauce.

4.  Now sprinkle on 1/3 of your mozzarella cheese, followed by 1/3 of your Parmesan cheese.

Repeat steps 1-4 until you reach the top of your pan.  I have a smaller pan so my lasagna ends up being three layers.  If you have a deep pan, apply 1/4 of your ingredients at each step and make a four layer lasagna.

This is how it should look right now:


Pop your lasagna in the oven for 30-35 minutes until the top cheese is fully browned and melted.
