Pumpkin Chocolate Chip Cookies

I have so many regular recipes I need to add, but I thought I'd skip to these, just in case you wanted something yummy to add to your dessert menu for Thanksgiving. These cookies are so good!  My friend, one of the Young Women leaders, taught the girls how to make these yummy Pumpkin Chocolate Chip Cookies.  Complete out of scratch, yum!  Once again, can I mention how much I love pumpkin?  I'm not alone here, right?

All the ingredients, although I realized later I forgot to take a picture w/ the Baking Soda.

Mix together all the wet ingredients.


In a separate bowl mix together all the dry ingredients.


Gradually add flour mixture into the pumpkin mix.


Stir in the Chocolate chips.

When the Young Women made these they made the cookies even bigger!  They were like mini cakes, and they were amazing!  I made mine a bit smaller, but still pretty large cookies.


And there ya go, amazing, wonderful, delicious, Pumpkin Chocolate Chip Cookies.

Pumpkin Chocolate Chip Cookies

Ingredients:
 1 1/2 c. Sugar
3/4 c. Oil (or 1/4 c. Oil & 1/2 c. applesauce)
1 c. Pumpkin
1 tsp. Vanilla
1 Large Egg
3 1/2 c. flour
1 t. Baking Powder
1 t. Baking Soda
1 t. Cinnamon
1 t. Pumpkin Spice
1/2 t. Salt
1 c. Chocolate Chips

Preheat Oven to 400 degrees.  Combine sugar, oil, (applesauce), pumpkin, vanilla and egg in a large bowl and mix together.  In a separate bowl combine flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice.  Gradually add flour mixture to the pumpkin mixture.  Stir in chocolate chips and drop balls of dough (whatever size you want) onto a cookie sheet.  Bake for about 10-12 minutes. Enjoy!

Someone made these the other night at church and they put cream cheese frosting on top...a-maz-ING!!!!
