Italian Chicken


My goo' goo' friend, Janel, and old roomie, gave me this recipe, way back when?!  I think it's wonderful and tastes so healthy too.  It's such a simple recipe.  There are several different ways to prepare the chicken, depending on how healthy you want it.  If you don't want to bread and fry the chicken, then just season your chicken w/ different herbs and spices, such as: Italian dressing seasoning, Italian seasoning, parsley, basil, etc.  It tastes great still, and a lot more healthy.  I still like the breaded chicken the best though!  I even like to eat just the rice covered in the tomatoes and juice, so good.  I rate this dish a 4.

Bread and brown chicken in oiled frying pan and place in a 9x13 baking dish.

Pour 2 cans of diced tomatoes over chicken.  I really like the Italian flavored tomatoes, but I don't usually have that kind.  I always have the plain diced and it still tastes great!

Right after being baked in the oven covered for 35 minutes.  (If you use chicken breasts instead, then bake 45 minutes covered.)

Sprinkle all over with Mozzarella Cheese and place back in the oven uncovered for 5 more minutes until melted and bubbly.

Right out of the oven!!!  Look at all of that wonderful cheese!

Serve on top of rice, make sure to put extra juices on top.  I usually like to serve over brown rice, but I was all out.  Still good though. Yum!

Italian Chicken

Ingredients:

10 Chicken Tenders (or 6 Boneless Ck Breasts)
Flour
3 Eggs
Breadcrumbs
Olive Oil
2 Cans Diced Tomatoes (or 1 large can)
Shredded Mozzarella Cheese

Preheat oven to 350.  Beat the eggs.  Dip each chicken piece, in this order: eggs, flour, eggs, breadcrumbs.  Make sure every inch is covered.  (Sometimes I skip the flour, it just holds the eggs on better if you do the flour.)  Cover the bottom of a frying pan about a 1/4 inch w/ oil and heat.  Brown chicken and sit on paper towels.  Place the chicken in a 9x13 baking dish and pour diced tomatoes on top.  Cover dish and bake for 35 minutes (45 min. if using ck breasts).  Remove cover and sprinkle cheese on top.  Cook for 5 more minutes until melted and bubbly.  Serve over rice.  Enjoy!

Yummy! We tried this over egg noodles but next time I will do the rice. The egg noodles didn't work out so well.
