Biscuits and Gravy

My roomie from college, and good friend from TN, Holly is a true Southern Belle.  My roommates and I use to take turns cooking, she was always true to her TN roots and would cook comfort food.  One of her yummy specialties was Biscuits and Gravy!  I asked her for the recipe once and she told me she didn't have exact measurements.  Here's exactly what she said, "I just take spoonfuls of flour at a time, mix in and then gradually mix in milk or water until I get the consistency I want it to be."  So, that's how I've been doing it ever since.  Until last night!  I decided I would come up with an exact recipe so I could share it w/ y'all!!  I love this dish, and of course, I always make it for "Brinner" not actual Breakfast. 


Fry up the sausage like so. (My favorite brand is Tennessee Pride, it makes a lot of grease, but I didn't have any this time.)

Mix in 1/4 c flour...  (Make sure to scrape the bottom of the pan while mixing to collect all grease and flour.)

Then gradually mix in 1 c. of milk.

Mix in another 1/4 c. of flour, followed by 1 c. of water (mix in gradually).  Finally add your last 1/4 c. of flour and 1 more cup milk.  Until it has the consistency shown above.  If you want to make a larger amount of gravy continue adding flour and milk/water.  (If you like a runnier gravy add more milk or water.)  Top off with pepper and salt to taste, I always end up adding even more to my own serving. 

Mix and let simmer for about 5 minutes.  The gravy does thicken the longer it sits.  If it gets too thick just mix in more liquids and heat.

I never make my own biscuits.  I've decided Pillsbury Grands are just as good.  I like Flaky Layers or Southern style.  I use whatever I have in my freezer. Or use my Easy Homemade Buttermilk Biscuit Recipe to make your own!

Cut the biscuits open lengthwise and top off with gravy.  Serve with loaded scrambled eggs, and mixed fruit. Yum!

Biscuits and Gravy



Ingredients:

6-8 oz of your Favorite Sausage (the greasier the better!)
3/4 c. Flour
2 c. Milk
1 c. Water
Salt
Pepper

6-8 Biscuits

Brown and crumble sausage.  The greasier the sausage is the better.  Leave in the grease, turn heat to medium low and mix in 1/4 c. of flour.  Gradually mix in 1 c. Milk until gravy gets creamy.  Mix in another 1/4 c. of flour and then gradually mix in 1 c. Water.  Finally mix in the rest of the flour (1/4 c.) and 1 c. of Milk, make sure there are not any chunks of flour left.  If you want a thicker gravy then mix in less liquids, if you want a runnier gravy then mix in more liquids until it's to the consistency you like.  Mix in Salt and Pepper to taste.  Let simmer on low for about 5 minutes.  Serve over biscuits.  Enjoy!

  1. one time I attempted to make the gravy from scratch in memory of the good times we had. It turned out awful! I don't know. You may just have to be a true southern bell to make biscuits and gravy!
