This was one amazing, fresh and yummy tasting dish! I even dusted off the grill and cooked these puppies up all by myself! In fact, I'm making them again today! (I was supposed to yesterday, but thanks to a HUGE birds next found in my grill yesterday, it has been delayed until today. Click here or here to see what I'm talking about.) Don't let the double marinade thing scare you off, both super easy to make, just look at it as a double bonus for your taste buds. FYI, the chicken is really good w/o the second marinade too, not as full of taste, but still great! Let me know what ya think!
Combine the zest and juice of 2 limes, 3 T Olive Oil, Mustard, Worcestershire, Soy, 3 onions, 2 garlic cloves salt and pepper and mix well and add in chicken.
Place baggy in fridge and marinate for 1 hour.
Place chicken on grill for 7 minutes. Then flip and cook until internal temp reaches 170.
Meanwhile combine juice and zest of one lime with remaining olive oil, 3 chopped onions, 2 minced garlic cloves, basil.
Remove chicken from grill and let meat rest.
Slice chicken into bite-sized pieces and pour sauce over top.
Double Marinated Basil Lime Chicken
1/4 C + 3 T Extra Virgin Olive Oil
3 T Dijon Mustard
3 T Worcestershire Sauce
3 T Soy Sauce
6 Green Onions Chopped Divided
4 Cloves Garlic Minced Divided
2 T Chopped Basil
Salt and Pepper to taste
3 lbs Chicken Breasts (or tenderloins)
1. Combine the zest and juice of 2 limes, 3 T Olive Oil, Mustard, Worcestershire, Soy, 3 onions, 2 garlic cloves salt and pepper and mix well.
2. Cut chicken into even cutlets (or just use tenderloins) and place in a gallon sized baggy.
3. Pour marinade over the chicken, seal baggy, place in fridge and marinate for 1 hour.
4. Preheat grill. Place chicken on grill for 7 minutes. Then flip and cook until internal temp reaches 170.
5. Meanwhile combine juice and zest of one lime with remaining olive oil, 3 chopped onions, 2 minced garlic cloves, basil.
6. Remove chicken from grill and let meat rest.
7. Slice chicken into bite-sized pieces and pour sauce over top. Enjoy!
