At the beginning of the new year, as I'm sure a lot of you have, we made a goal to eat healthier. So, we set out to find healthy, yummy recipes. This recipe I came across when I was watching some show that was on tv on the LiveWell Network, have you heard of it? I hadn't! Anyways, I tried it, and I thought it was great! It was a little too spicy for my husband, but I liked the kick. If you can't handle the jalapenos, just switch them out for green chilies. For the kiddos, I gave them everything but the avocado sauce, it worked out great! Do you think you can handle the heat? Or are you more like the hubs who was whimpering like a baby? (Not really, but he was downing his water for sure!)
Rub chicken with garlic and salt and cook in oil then set to the side.
In the same pan, saute veggies.
Add in the rice.
Mix in Chicken Broth, cover and simmer for 15 minutes.
This is what it should like like.
Mix ingredients for the spicy avocado sauce.
Serve the chicken and sauce over rice.
Chicken and Rice with Spicy Avocado Sauce
Ingredients
2 T minced garlic
pinch salt
2 T olive oil
1 c dry rice
2 c chicken broth (I used one can and 3 T water)
1/2 c diced onion
1/2 bell pepper diced
1 c of baby carrots sliced
1 avocado1/4 c chopped jalapeno (or 1/2 a can of diced jalapenos)
1/4 c chopped cilantro
2-3 T water

Directions
First, coat the chicken in about 1 tablespoon of garlic and salt. Put the oil in the skillet and set on a medium high heat. and cook for about 5 minutes on both sides. Remove chicken from the pan, set to the side and cover to keep warm.
Add vegetables into the pan and sauté until the onions appear to be translucent.
Add in about a tablespoon of minced garlic. Add dry rice into the pan and coat the rice with oil. When the rice turns bright white, add the chicken broth. Cover and allow to simmer for 10-15 minutes or until the rice is cooked.
While the rice is simmering make the spicyavocado sauce. Chop up avocado and add in jalapeno, cilantro and enough water to help mix it all together.
Serve chicken over the rice and top with the spicy avocado sauce. Enjoy!
