Day 5 - Chicken Curry

Please welcome my friend Brittany to Day 5 of 25 Days of Recipes.I have known this girls since college, she is just as happy and sweet as she looks in her picture.  She is probably one of the most upbeat people I have met.  I'm always impressed w/ what kind of a mom she is, according to her blog and facebook page.  She is always doing the cutest activities with her kids, the most amazing projects around the house, and she's so athletic!  I'm always so blown away w/ these mommy's who find the time to run 1/2 marathons!  This girl's great!

My name is Brittany Crane and I am sharing a Chicken Curry recipe that I am obsessed with. Among being obsessed with food, I also love shopping, running, being a mom, and making cakepops. I own Ladylove Cakepops. It is a cakepop company based in the D.C. area. (Don't worry we can ship anywhere in the United States.) We bake your favorite flavor of cake, mix in cream cheese frosting, cover it in chocolate and decorate it. They are fabulous! Way better than regular cake or cupcakes! Here is the Chicken Curry recipe. I Hope you enjoy it as much as I do.


Chicken Curry

2 cans coconut milk
1 can water (use the coconut milk can)
1 Tbsp fish sauce
1 Tbsp honey
1 Tbsp paprika
4 cubes chicken bouillon
Red Curry Paste (The more you use the spicier it will be) I usually do 1 Tbsp or so. I am a wuss.
Potatoes
Cooked and diced chicken

Boil the potatoes until soft. (Not quite to the softness you would if making mash potatoes.)
Mix all other ingredients together in a large pot, add potatoes and chicken. Let it sit on the heat for a few minutes and Voila! Serve over rice. Hope you like it as much as I do.

  2. Where do you find fish sauce and what size of can for the coconut milk?

  3. You find fish sauce in the Asian isle. I believe it is 15 oz cans of coconut milk. They are just the regular size cans. Hope that helps sorry I forgot to include it.

  4. Hey Brittany! I'm making this tonight!! I actually threw everything into a crockpot, along w/ the frozen raw chicken and cuncooked potatoes. I'm cooking it on low for 4 hours...we'll see if I need longer. Then I'm going to cut up the chicken and mix back in. I'll let you know how it works out.

  5. Super easy, but really liquidy. I'm thinking for the crockpot I could cut back on water next time.
