Cheesy Meatloaf

Do your husbands love meat as much as mine does?  He loves it, especially meatloaf.  For the longest time I refused to make it b/c I hated touching it!  I finally gave in to making it but, bought plastic gloves so I wouldn't have to touch the stuff w/ my bair hands (worked great).  I remembered having the best meatloaf that my friend's (Joe Dean), mom made a few times, it has cheese in it!!  I asked him for the recipe, he told me what was all in it but, didn't know any measurements.  So, I came up w/ the measurements and combined it w/ a recipe I saw on Diners Drive-ins and Dives a while back.  Here's what I came up w/...

All the ingredients needed.  (That's one of my little helpers in the background.)


Combine everything together (but the cheese and ketchup) and mix together.  Notice my gloved hands?  Yeah, much better!


Fold in the ketchup and cubed cheese.


Mold into a large bread pan and drizzle w/ ketchup.


Bake at 350 for 45 minutes- 1hr.

It was very greasy, so I took it out and placed it on a plate.


Slice it up and serve!  See all the yummy gooey cheese?  I like to use extra ketchup too.  But, I'm a huuuge ketchup fan.  Yum!

Cheesy Meatloaf


Ingredients:

2 lbs Ground Beef
1/4 c. Bread Crumbs
1/4 c. Chopped Onion
2 eggs
1/2 - 1 T Salt (Depends on how much you like salt)
1/2 T Garlic Powder
3/4 T Pepper
1 T Worcestershire Sauce
8 oz Cubed Cheddar Cheese
1/4 c. + extra Ketchup

Preheat oven to 350.  In a large bowl mix the first 8 ingredients together until spices are evenly distributed.  Fold cubed cheese and ketchup into meat.  Transfer to a large bread pan, or any baking dish w/ sides, and mold to fit.  Drizzle w/ extra ketchup. Bake anywhere between 45 minutes - 1 hour, until no longer pink inside.  Let cool for 10-20 minutes.  Slice and serve.  Enjoy!
