Chicken Fajitas (Crock Pot)

This recipe has to be one of my family's favorites!  It's such an easy thing to throw together in the morning, turn on the crock pot and totally forget about it until dinner time comes around and you're all ready to eat!!  It tastes so good, so flavorful, but yet you put so little effort into it!  Just the way I like it!  Depending on how spicy you like your food, you can either use jalapenos or green chilies, I prefer more spice so I use Jalapenos!!  Also this dish is sooo low in calories, great if you're watching what you eat!  I rate this recipe a 4.5.

After cooking for 8 hours and right after shredding the chicken!


All you really need to add is sour cream, but guacamole is really good too!

Chicken Fajitas

Ingredients:

1 1/2 lbs. chicken breast
1 cup chopped onion
1 green pepper chopped (whatever color pepper you want)
1-3  jalapeno peppers chopped (or 4 oz can)
1/2 bunch cilantro
2 cloves garlic minced
1 tsp chili powder
1 tsp cumin
1 tsp coriander
1/2 tsp salt
1 can chopped tomatoes (sometimes I substitute diced tomatoes w/ green chilies)

Directions:
Chop all vegetables and place in crock pot with chicken (chicken can be frozen!!!), mix together. Cook on low 8-10 hours or high 4-5 hours. Shred chicken and serve with tortillas and toppings of choice.  Enjoy!!!
